4 tablespoons butter, melted
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dry mustard
1 cup milk
1/2 pound grated cheese (Cheddar, Monterey Jack, Swiss, etc)
Preheat the oven to 350 degrees F. Add the melted butter to a 9x13 baking dish, turning the dish to coat the bottom. Set aside.
In a bowl, whisk together the salt, pepper, mustard, and eggs until frothy. Whisk in the milk then stir in the cheese. Mix well.
Pour the egg mixture into the baking dish.
Place the dish in the oven and bake at 350 degrees F for 25-30 minutes or until the eggs are set. Remove from the oven and let sit for 2 minutes before cutting into squares and serving.
Heat oil in a large heavy pot over medium heat. Add bell peppers and onion and cook, stirring occasionally, until softened and just beginning to brown, 10–12 minutes.
Add tomatoes, garlic, jalapeño, basil, oregano, chili powder, and paprika to pot. Reduce heat to medium-low and continue to cook, stirring occasionally, until vegetables are very soft and liquid is thickened, 20–30 minutes season with salt and pepper. Discard jalapeño.
Preheat oven to 400°. Transfer bell pepper mixture to a 13x9” baking dish. Using the back of a spoon, make 6 evenly spaced divots in mixture. Spoon a dollop of ricotta into each divot, then crack 1 egg into each. Top with cheddar and Parmesan season with salt and pepper. Bake, rotating dish halfway through, until Parmesan is melted and egg whites are almost set but yolks are still runny, 15–18 minutes.
Serve baked eggs with toast. (Yolks will continue to cook as dish sits, so serve right away if you prefer your eggs soft.)
DO AHEAD: Bell pepper mixture can be cooked 1 day ahead. Let cool cover and chill.

1. Preheat the oven to 375°F. Grease a large, oven-safe skillet with the olive oil.
2. Using a small paring knife, cut around the stems of the tomatoes and remove them. Use a spoon to scoop out all the insides of the tomatoes. (Reserve the insides and use them to make tomato sauce or salsa.)
3. Arrange the tomato shells snugly in the prepared skillet. Crack an egg into each tomato. Top each egg with 1 tablespoon milk and 1 tablespoon Parmesan. Season each egg with salt and pepper.
4. Bake until the tomatoes are tender, the egg whites are set and the yolks are still a little jiggly, 15 to 17 minutes. Let cool 5 minutes and then garnish with the fresh herbs. Serve immediately.

4 cups bagged coleslaw mix
1/2 cup canned sliced water chestnuts, drained and chopped
1 1/2 tbsp. reduced-sodium/lite soy sauce
6 large square egg roll wrappers
Optional dip: sweet Asian chili sauce
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.
Place coleslaw mix in a large microwave-safe bowl with 2 tbsp. water. Cover and microwave for 3 minutes, or until softened.
Drain excess water. Add all remaining ingredients except egg roll wrappers. Mix well.
Lay an egg roll wrapper flat on a dry surface. Evenly distribute about 1/6th of the slaw mixture (about 1/3 cup) in a row a little below the center.
Moisten all four edges by dabbing your fingers in water and going over the edges smoothly. Fold the sides about 3/4 inch toward the middle, to keep mixture from falling out. Roll up the wrapper around the mixture and continue to the top. Seal with a dab of water.
Place on the baking sheet, and repeat with remaining mixture and wrappers.
Spray egg rolls with nonstick spray. Bake until golden brown, 25 - 30 minutes.
