Bean stew or low beans with sausages prepared according to a Transylvanian recipe. It is a traditional recipe, very easy to prepare.

In our family it is one of our favorite dishes. No pot is too big for the beans. They eat the ground to the last grain. I usually cook a bigger pot to get us 2-3 days. If you want to cook a smaller portion you can use the same recipe, just cut the portions in half.

Method of preparation

One evening before preparing the recipe, the beans are chosen, washed well and put in a bowl with water to soak. The next day, it is boiled in 4 waters to be tolerated by the stomach at the time of consumption. Bring water to a boil each time, discard and replace again with hot water. After the fourth changed water, drain the beans and place in a bowl.

Step 2: Preparation
Fry the sausages in the pan, turning them to brown on all sides. After the sausages are fried, take them out on a plate, and heat the onion in the oil left in the pan. When the onion is hardened, add the tomato broth, half a cup of water, salt and boiled beans. Put the sausages, pepper, bay leaves and thyme in the pan, and the food is ready to boil.

It can be made with any kind of beans, and to shorten the cooking time I used pre-cooked beans.

The way we serve this bean dish leaves room for imagination.

I used a metal bowl serving Indian food, especially curry, but you can also use other plating such as a flat plate, a clay bowl, to which you can add a few slices of garlic-flavored toast, which go great with this food and adds a crunchy texture.

Eating beans with sausages in just 30 minutes

For sausage food you need:

300-400 gr sausages
150 gr pastrami
400-500 gr of dried beans
2 green onion bindings
1 link parsley
1 dill connection

Wash the onion well, clean it and cut it as small as possible. The beans are kept in cold water for about 30 minutes, then drained and set aside. The sausages should be cut into 1 cm thick slices and the pastrami into small cubes. The greens are finely chopped after being washed under a few jets of cold water.

When all the ingredients are prepared in this way, it is time to prepare the food with sausages. Put a little oil in a pan in which the onion is smothered. Add the beans, which are seasoned to taste, followed by ham and greens. Fill with water, which is added gradually until the beans are completely covered. Leave it to boil for five minutes, over medium heat, and at the end add salt to taste and add the rosemary sprig for a special aroma.

The recipe for bulgur with beans and spinach is part of the category complete proteins. That is, proteins that contain all 8 essential amino acids necessary for the normal growth and development of the body.

Bulgur contains more protein, fiber, vitamins and minerals than rice and has a low glycemic index.

3. Peel and finely chop the onion and garlic cloves and sauté them for 1-2 minutes in a tablespoon of olive oil. Add the chopped and peeled tomatoes and / or tomato juice, beans and hot pepper paste, cover and simmer for a few minutes.

4. Add the spinach and soy sauce, season with salt and leave for a few more minutes.

5. Strain the bulgur well, sprinkle it with a little lemon juice, salt, chopped green parsley and dried basil.

6. Place a layer of bulgur on the plate, cover with spinach beans, season with chopped green parsley and serve with pleasure.
