For the savarine dough put the flour in a bowl, mix the milk with the dry yeast and sugar and pour it over the flour. Then add the eggs and oil and mix the dough with a spoon because it will be very soft. Add salt and mix the dough for 5 minutes then cover the bowl with plastic wrap and let the dough rise for 30-40 minutes or until it doubles in volume.

When the dough has risen, put it in savarine forms, which you have greased with butter and covered with flour. Help yourself to two teaspoons. Let the savarines grow in the molds for another 20 minutes or until they reach the edge of the mold. Then put the savarines in the oven for 20-25 minutes or until they are nicely browned on top. Then let the savarins cool.

For the syrup put water and sugar on the fire and let it boil until the sugar dissolves. Turn off the heat and add the rum essence. Allow the syrup to cool.

After the savarines have cooled, turn them upside down and cut a lid without separating it completely from the rest of the savarin (SEE VIDEO). Dip each savarina in the syrup.

Whip the cream. If you use sweet cream for whipped cream, add a few tablespoons of powdered sugar. Put the whipped cream in a bowl, lightly open the lid of each savarine and put the whipped cream in a very generous layer. You can put a little jelly or a little strawberry jam on each lid of the savarin. Refrigerate the savarins for at least 8 hours or overnight. Serve cold.

Ingrediente Savarină clasică din aluat dospit:

  • 25 de grame miere de albine de salcâm
  • 25 de grame drojdie proaspătă
  • 1/2 de linguriță de sare

  • 1 linguriță extract de vanilie
  • 250 de grame de făină pentru pâine (eu am folosit BL-550, făina ungurească)
  • 6 ouă mari
  • 100 de grame de unt cu 80% grăsime
  • în plus, unt pentru uns forma și 1-2 linguri de făină pentru tapetat
  • 500 de mililitri apă
  • 250 de grame de zahăr
  • 50 ml. suc de portocală
  • coaja de la 1/2 de lămâie (decojită cu un peeler în fâșii, doar partea galbenă)
  • 100 ml. de rom

umplutură și decor:

  • 600 ml. smântână pentru frișcă (minimum 32% grăsime și să fie foarte rece, răcită la frigider cel puțin 8 ore)
  • 40 de grame de zahăr pudră vanilat
  • 350 de grame de zmeură (proaspătă sau congelată)
  • 100 grams of sugar
  • 2 tablespoons lemon juice

Preparare Savarină clasică din aluat dospit:

Toate ingredientele pentru aluat trebuie să fie la temperatura camerei (ouă, făină, untul moale). Nu recomand să vă aventurați să faceți acest ”aluat” la mână, aveți nevoie de mixer. Am pus cuvântul aluat înte ghilimele pentru că are o consistență foarte ciudată, în niciun caz nu poate fi frământat, e doar ceva mai dens decât aluatul de clătite.

1. Puneți în castronul mixerului mierea, drojdia sfărâmată în bucățele, extractul de vanilie și 3 ouă. Bateți bine cu mixerul, până când se omogenizează perfect. Separat, amestecați sarea cu făina și adăugați-o treptat peste compoziția din castron. Amestecați până se omogenizează, apoi adăugați restul de 3 ouă bătute, puțin câte puțin. Mixați la viteză medie timp de 10 minute.

2. După 10 minute, adăugați în castron untul moale, tăiat în bucățele, fără a opri mixerul. După ce untul se încorporează complet, aluatul trebuie să fie elastic, moale și lucios. Lăsați-l să se odihnească într-un loc călduț timp de 30 de minute, acoperit cu folie alimentară.

3. Între timp, se pornește cuptorul și se fixează la 200 de grade Celsius. Se unge cu unt solid și se tapetează cu făină o formă circulară cu diametrul de 24 de cm, cu gaură la mijloc. Atenție, să fie unsă și tapetată peste tot, ca să nu apară eventuale probleme (extrem de neplăcute) la scoaterea savarinei din formă.

Notă: desigur, aluatul se poate coace și în forme individuale de savarină, în funcție de mărimea acestora se pot face din această compoziție 10-14 savarine. Atenție, și formele mici trebuie unse cu unt și tapetate cu făină la fel ca cea mare.

4. După 30 de minute, aluatul se toarnă în formă și se dă imediat la cuptorul preîncins la 200 de grade Celsius, unde se va coace timp de 20-25 de minute. La cuptor va crește mult și partea vizibilă (care este de fapt cea care va deveni baza savarinei) va crăpa. Este normal să se întâmple așa.

5. După ce se coace, savarina rumenă se răstoarnă pe un grătar de sârmă și se lasă să se răcească bine.

6. Între timp, se pregătește siropul, care trebuie să fie fierbinte în momentul în care se va turna peste savarina complet rece (răcită până la temperatura camerei). Într-o crăticioară, se caramelizează jumătate din cantitatea de zahăr prevăzută pentru sirop. Când zahărul devine auriu, se toarnă apa (500 ml) și se adaugă restul de zahăr, sucul de portocală și coaja de lămâie. Se fierbe până când se dizolvă zahărul complet, se adaugă romul și se mai dă în clocot de două ori.

7. Pentru a-mi fi mai ușor să manevrez savarina, pe care mi-am imaginat-o extrem de fragilă după ce va fi îmbibată în sirop, am tăiat-o în două, transversal. În secțiune se observă foarte bine câte alveole a dezvoltat în interior, e ca un adevărat burete care va absorbi mult, mult sirop delicios.

8. Am așezat fiecare jumătate de savarină în câte o tavă, deasupra unui tocător subțire de plastic, ca să o pot manevra mai ușor la final, apoi am turnat siropul fierbinte, împărțindu-l în mod egal deasupra celor două jumătăți. Am înclinat tava, am colectat siropul rămas neabsorbit și l-am turnat din nou deasupra savarinei, repetând până când tot siropul a dispărut în aluatul copt. Am lăsat să se răcească până la temperatura camerei.

9. Pentru sosul de zmeură: zmeura (proaspătă sau congelată, nu contează, evident, având în vedere că e iarnă, eu am folosit congelată), zahărul, zeama de lămâie și 3 linguri de apă rece se pun într-o crăticioară. Se dă la foc până când dă în clocot, se fierbe 2-3 minute apoi se trage deoparte și se dă prin sită, presând bine până când în sită nu rămân decât semințele.

10. Smântâna pentru frișcă foarte rece se bate cu mixerul până ce începe să formeze creste moi la suprafață apoi se adaugă zahărul pudră și se mixează cu mixerul la viteză mare până ce frișca se întărește foarte bine. Atenție, nu se bate mai mult de atât pentru că există riscul să se separe în unt și zară.
